I believe that you have the answer in you already, for the major you want to take.
It's either you want to justify another major with better prospect or you still do not know it yourself.
Go and dig it up what you like, what you get interested with whenever you are reading it (calculus?) etc. (Alright, a bad joke for the calculus..)
If you know it yourself, don't care about job prospect or whatsoever. Just go and do it. There's a will, there's a way.

You look like the food science type. You seem to know a quite a lot about food stuff, and seem quite interested in it (uh... right?). At least based on your past blogposts. Somehow I think you will like food more.
Microbiology is my second choice, if I can't get my Zoology. Its way wider than food science in a way, used in a wide variety of ways - environment, bioremediation, industrial, health stuff, agriculture, etc. Go for this if any of those interests you. Personally, I'm interested in those bioremediation stuff. Save the environment.
